Hi,
I'd like to fit a water temperature gauge to my Citroen AX.
Would one fit in the same hole as the Overheating Light sender ?

Hello and welcome to the forum. Assuming you already have the guage in mind that you wish to use then all you will need is a temperature sensor screwed into the radiator, quite possibley in the existing overheating sensor's hole. You can get sensors in various sizes, see

The existing overheating sensor won't be fitted to the radiator (as it would be useless in the event of a loss of coolant). There is a good chance that the engine already has a hole for a gauge sensor, as the same engine would have been fitted to cars with temperature gauges.

This diagram is for carburettor AX, where both gauge sender (#10) and temp warning switch (#9) are fitted. The monopoint injection arrangement is similar.
Do post your VIN, and I might be able to hit exactly the right parts diagram.

What you are looking for is either of the #11 in the diagram (there are 2 shown), they are blanking plugs that can be removed to fit a standard threaded sensor.

The voltage changes according to the load (headlamps, heater blower, etc.)
Will this affect the temperature reading on the gauge ?

The temperature sensor is a thermister which is simply a device whose resistance changes with temperature. The car's voltage does not change significantly with load, it is the current drawn which increases with loading so the voltage across the thermister will be pretty constant, assuming the battery and alternator are in good health, then as the thermister warms up its resistance drops to allow an increased current flow in the guage circuit. This increased current causes a bigger deflection on the guage and thus shows a higher reading. If you have an electronic guage then its internals will convert the measured current changes to alter the reading.
