Citroen DS3 engine warm error

Good day all

I have a 2012 Citroen DS3 1.6THP
Was driving to school and the engine temperature vault error came on. Stopped immediately.

We replaced the thermostat housing (believe it has 2 sensors) refilled with coolant.
Car was not running for about 10days but when we switched it on within 2seconds the fans came on and then the same error again.

When i scan it with OBD scanner the coolant temp is low and when the engine is running according to the OBd scanner it didnt go over 76 degrees Celsius - this was after it was driving for about 30minutes.

When you turn the car on without starting the engine, the dashboard shows the temp correct but as soon as you start the engine it jumps to red and give error.

Any suggestions what I can check next? Probably some other sensor / wiring issue?
