I have looked and not found a reference for them, was going to have a look for it again but as Armadillo says, it is likely a wind up - the "606" being on the bonnet points in that direction.
None of the other photo's show any numbers on the bonnet.

I guess he used the pickling vinegar used to have originally pickled some beetroot. That could impart an unusual flavour.
